I’ve tried a lot of variations for pasta and most of them have been really good but not all of them are cheap. I love spaghetti squash but even when it’s in season it isn’t the cheap. If you can afford it on a regular basis get it, if you can splurge once in a while please do. But if you need a cheaper every day something to pour your sauces over then try zucchini.
This is one of my favorites. Zucchini is cheap, easy to prepare and really doesn’t have much flavor of it’s own, just like real pasta. It also has the right texture and consistency and goes well with italian sauces.
For spaghetti I simply peel the zucchini and then use the vegetable peeler to slice it into thin ribbons. I saute the ribbons in garlic and butter until tender (cook to the consistency you like your pasta) then add meat and sauce. I like Best Choice Garden Vegetable Sauce. It’s tasty, under a buck and only has 3g of sugar per serving.
